Ajere, Yirgacheffe, Ehtiopia, Africa - washed

The Ajere holds wonderful surprises. Altering the brewing profile always brings out all the different flavor nuances in this coffee and yet it remains super sweet and floral. Notes of fruit tea, jasmine and lavender alternate with rose, nougat, peach, honey and more. A very playful coffee, which, by the way, a longer degassing time does well.

 

Flavour profile:
Lavender, jasmin, fruit tea, rose, nougat, honey, lemon, cinnamon notes. Quite sweet and floral with a lively acidity and a light yet complex body.

 

Brewing advice for the Kalita Wave 155 coffee dripper:

  • Coffee grounds: 15 g / 0,53 oz
  • Water temp: 93 °C / 199,4 °F
  • First pour: 30 ml, 30 sec
  • Second pour: 200 ml, 110 sec

 

 Tip:

  • Use water with around 70 ppm.
  • Beans should degas at least 8 days from the roast date.

Ajere Washing Station was founded in 1998 by Amare Tesema. Today, between 800 and 850 smallholder farmers deliver their cherries to Ajere WS, which has a size of 1,9 ha. The washing station is located in Gedeo Zone which has borders with the zones of Guji to the east, Borena to the south and west, and Sidama to the north. It supports the local community school e.g., with the construction of new classrooms.
